Electronic Tongue

The Astree Electronic tongue from Alpha MOS is a liquid taste analyzer designed for taste assessment in solution or solids dissolved in liquids. Like the human tongue it provides a global "taste fingerprint" of a complex mixture of organic/inorganic compounds. For all tastes, it performs analysis with similar or better detection threshold than the human tongue. It has several applications in the pharmaceutical industry, food&beverage sector. It can be used to: analyze flavor ageing in beverages, quantify bitterness or "spicy level" of drinks or dissolved compounds, quantify taste masking efficiency of formulations, analyze medicines stability in terms of taste, benchmark target products. This technology provides objective and reliable results, faster than traditional methods used (gas chromatography, GC/MS....) and can be correlated to a sensory panel evaluation, first as a training stage, then, in some cases, as a substitute to this technique for safety reasons and to avoid human fatigue.
